Sweet Potato Cookies

Super healthy yet delicious Sweet Potato Cookies with no added sugar and butter! Great for BLW and toddlers!

No kneading sweet potato cookies!

I have a 3 years old toddler and a 7 months BLW baby who seem to be hungry all the times. To avoid giving them too much commercial foods with hidden ingredients, I always stock up some homemade cookies in the pantry for their convenient. Sometimes I eat it too!!

Sweet potato cookies!! Healthy yet delicious to eat, both of my boys love it! This cookies is free from sugar, the sweetness comes from the sweet potato and a secret ingredient, Banana. With the combination of the 2, this cookies create a natural sweetener, soft and chewy texture that are suitable for baby from 7 months and older.

Making cookies is always a fun activity. You can ask your child to help with shaping the cookies, a good way to improve fine motor skills. However, after cleaning could be a pain 😂 This recipe can make more than a dozen of cookies, I make around 17 with half small and half medium size. The cookies can last up to 3 days in a airtight container. It is best to store in the fridge if you live in a warmer country. You can always make a batch ahead and stock up in the freezer for emergency, this way it will stay for a good 3 months. Just remember to store it properly with an airtight container or seal bag.

Ingredients

-1 1/2 cup sweet potato (cut in small cube)
-1 medium size banana (mashed)
-1/2 cup self-raising flour plus extra for dusting
-1/2 cup rolled oat (finely blend)
– 1 tsp vanilla extract

Instructions

  • Preheat oven 170c
  • Cook sweet potatoes in hot boil water until soft. Mash it with a masher and set aside to cool.
  • Use hand blender to blend up roll oats until fine.
  • In a bowl, mix in sweet potatoes, banana, oats and flour. At last, add in vanilla extract and use a spatula to stir until all ingredients are combined.
  • Place the dough on a lightly floured surface, and flatten it with a roller. Use cookies cutter to cut out your cookies. You might need to dusk extra flour if the dough is too sticky.
  • Place the cut cookies on a baking tray and bake for 25 minutes until slightly brown.
  • Enjoy!
