Creamy Lemon Popsicles

Creamy and sweet citrus flavour popsicles like no other! Homemade lemon popsicle that loads with Vitamin C, a sweet treat for your little one!

Lemons are available all seasons in Australia. This fruit is relatively high in vitamin C and antioxidant. Lemons benefits includes lower stroke risk, prevent cancer, lower blood pressure, prevent asthma, boost immune system and etc. Lemons are also believed to help with weight loss.

Today I’m sharing this simple 5 ingredients popsicle recipe that is creamy and tangy, so delicious that your kids would surely love it. These creamy lemon popsicles are made with lemon, sugar, butter, egg and heavy cream. Let’s make it now and enjoy it the next day!

Recipe

Preparation Time: 5 minutesCooking Time: 10 minutesServe: 5
Ingredients:
– 1 tbsp butter
– 1 egg, whisked
– juice from 2 lemons
– 1/2 cup sugar, 125ml
– 1 cup heavy cream

Instructions:

  • To make lemon curd, in a saucepan, add butter, egg, lemon juice and sugar and simmer on medium heat. Stir constantly and let’s cook for about 3 minutes until mixture is thicker and sugar is dissolved.
  • Pour in heavy cream and combine it well with the mixture on low heat for another 2 minutes.
  • Remove from the heat and place saucepan on top of a bowl that fills with chilled water. When the mixture is cool, pour into the popsicle molds and chill in the freezer overnight. Enjoy the next day!
