Prep time: 10 minutes | cooking time: 20 minutes | serve: 10 |
INGREDIENTS: – 2 cups all-purpose flour – 1 tsp baking powder – 1/2 tsp baking soda – 1/2 tsp salt – 1/2 cup sugar – 1 egg – 3/4 cup orange juice – 1/4 cup vegetable oil – 3/4 cup raisin – 1/4 cup pepita | ||

INSTRUCTIONS:
– Preheat oven to 200C, grease your muffin pan or place muffin cups in the pan. Set aside. – In a bowl, combine flour, baking powder, baking soda and salt, stir well and set aside. – Beat egg and sugar in a cake mixer on high speed for 2 minutes or until colour is lighten. Add orange juice and oil and beat for another minute. – Incorporate the dry ingredients into the cake mixture and beat on low speed until it combined and smooth. – Fold in raisin and pepita, stir well. – Spoon batter into muffin cup for 3/4 full. Transfer to oven and bake for 15-20 minutes until you check with toothpick and it comes out clean. – Place muffins on a cooling rack and serve warm. Enjoy! |
