HOW DO YOU SERVE THIS PANCAKE

I served this pancake as a whole and topped with fresh cherry tomatoes and mint leaves, then sprinkle with toasted sesame seeds. My children just have it on it own with extra fruits as a side. To serve baby and toddler, cut the pancakes into finger size or any pattern your toddlers like.

There are also others option like yogurt, cream cheese, sour cream or even jam that you can serve along with this pancake with extra fruits and vegetables! There are really no limit of what goes with pancakes isn’t it ?

BABY FRIENDLY GREEN SPINACH PANCAKE WITH DISCARD SOURDOUGH
Prep time: 5 minutescooking time: 6 minutesserve: 2

INGREDIENTS:

– 3 cups fresh baby spinach
– 1 tbsp olive oil
– 3 tbsp milk
– 3 eggs/ flax seed
– 1/4 cup unfed sourdough starter/ Greek yogurt
– 1/4 cup plain flour
– 2-4 tbsp Parmesan cheese

INSTRUCTIONS:


– Place spinach and milk in the blender, blend until smooth. Then add the remaining ingredients except cheese and continue blend until mixture is well combined.

– Heat up a pan, pour mixture evenly into the pan and cook for 2-3 minutes until you see bubbles on surface. Drizzle extra oil surrounding the edge is required.
– Sprinkle cheese on top. Carefully flip pancake over and continue to cook for another 2 minutes or until fully cooked.
– Transfer to a plate, top with fruits or vegetables as desired. Enjoy!
