So let’s make some more strawberry’s recipe shall we? I’m sure this is the best time to make full use of them. Today’s special is Agar Agar Strawberry and Cherry Coconut Jelly Cake. A vegan and vegetarian friendly dessert that is eye catching and delightful.
WHAT IS AGAR AGAR JELLY CAKE
Agar agar is a plant based jelly substitution of gelatin, made from red algae. It is more powerful than gelatin and can be set at room temperature often used in making desserts. Agar agar is odourless and tasteless so it incorporate well with any foods without altering the taste.
Agar agar jelly cake, a type of no-baked cake that’s often consists of fruits/milk or a combination of both, using agar agar powder as the setting agent. This type of jelly cake are widely popular in Southeast Asia countries, the place where agar agar invented from.

Beautiful jelly cake with strawberry layered on the top and cherry coconut milk as the base. This agar agar fruits cake is light and refreshing with a burst of flavour, a total showstopper that is great for any party.
WHAT DO YOU NEED TO MAKE AGAR AGAR STRAWBERRY AND CHERRY COCONUT JELLY CAKE
- agar agar powder
- strawberries
- cherries
- coconut milk
- sugar
- water
HOW TO ASSEMBLE AGAR AGAR STRAWBERRY AND CHERRY COCONUT JELLY CAKE
You need a bundt cake mold or any similar type of jelly mold for this recipe. Start with the top strawberry layer by assemble fresh sliced strawberry at the bottom of the cake mold. Pour the strawberries jelly mixture and wait for it to set. Then fills the second cherry coconut jelly layer with extra cherries assemble within the mixture. Chills in the refrigerator for at least 2 hours.

Prep time: 30 minutes TOTAL TIME: 3 HOURS 50 MINUTES | cooking time: 20 minutes | serve: 10 |
INGREDIENTS: Strawberry layer -1 3/4 cup whole strawberries plus 1/4 cup sliced strawberries – 1/4 – 1/2 cup sugar according to your sweetness level – 2 cup, 500 ml water – 1 tbsp agar agar powder | Cherry coconut layer – 1 1/2 cup cherries + 1/2 cup cherries, pitted – 1/2 cup sugar – 1 1/2 cup, 375 ml water – 400 ml (one standard canned) coconut milk – 1 3/4 tbsp agar agar powder | Extra strawberry and cherry to serve |

INSTRUCTIONS
Strawberry layer – Grease cake mold and set aside. – Cut 1 1/2 cup strawberries into small dice. In a saucepan, add diced strawberries and sugar simmer for 5 minutes until strawberries is soft and sugar dissolved. Blend with hand blender until smooth. Transfer to a bowl. – In a saucepan, add water and agar agar powder, turn on low medium heat and bring it to boil. Constantly whisk the mixture until agar agar powder is fully dissolved. – Pour strawberry puree back into the saucepan and stir well with the agar agar mixture. – Pour 1/3 liquid into the greased jelly mold, assemble the remaining strawberries into the mold. Then pour the remaining liquid gently over them. – Let jelly set for 30-60 minutes depending on the room temperature or until the top is firm. To speed up, store it in the fridge. Cherry coconut jelly layer – Meantime, prepare the cherry puree by placing 1 1/2 cup cherries and sugar in a clean saucepan. Bring to boil and simmer for 5 minutes until cherries are soft and sugar dissolved. Blend with hand blender until smooth. Transfer to a bowl. – In a saucepan, add water and agar agar powder, bring to boil and stir constantly until agar agar powder is fully dissolved. Pour cherries puree into the pan and stir to combine. – Check the strawberry layer by gently touch the surface and see if it is dry and set. Very gently spoon cherries mixture on top of the strawberry layer. Assemble and distribute remaining cherries into the mixture. Chills in the refrigerator for 2 hours or until ready to serve. – To unmold, place jelly mold pan in a big bowl fills with hot water. Once you see the side jelly started to melt, place a serving plate on top and turn it over. Remove the mold pan, slice jelly and serve with extra fruits. |
