Salmon and corn fritters with fresh tomato salsa!! This is one of my favourite brunch menu that I served many times to my family. This flavourful fritter is crispy on the outside and soft on the inside, pairing along with sweet and spicy freshly made tomato salsa that’s add a burst of freshness to the dish. WHAT INGREDIENTS DO YOU NEED TO MAKE SALMON AND CORN FRITTERS
- Cooked salmon (fresh or canned), I’m using fresh grilled salmon
- Corns
- Red onion
- Egg
- Self raising flour
- Fresh coriander
- Turmeric powder
- Cumin powder
- Milk
- Salt & pepper to taste
- Vegetable oil for frying
Tomato Salsa
- Tomatoes
- Avocado
- Red onion
- Lemon juice
- Siracha sauce
- Salt & pepper to taste
HOW TO MAKE SALMON AND CORN FRITTER WITH TOMATO SALSA

Add all the ingredients in a large bowl except milk. I’m using leftover grilled salmon from our dinner the night before, you can also use canned salmon.

Add milk and mix well. Heat up oil in a pan, drop 2 tbsp of batter to make each fritter. Pan fry until golden brown on each side.

Top with tomato salsa and enjoy!

Prep time: 10 minutes TOTAL TIME: 30 MINUTES | cooking time: 20 minutes | serve: 12 FRITTERS – SERVE 3-4 |
INGREDIENTS: Fritters – 1 cup cooked salmon – 2 corn cobs, about 1 cup – 1 small red onion, finely chopped – 2 large eggs – 1 cup self-raising flour – 2 tbsp fresh coriander, finely chopped – 1 tsp turmeric powder – 1 tsp cumin powder – 1/2 cup milk – 1 tsp salt – ground black pepper – 3 tbsp vegetable oil for frying | Tomato salsa – 2 medium tomatoes, diced – 1 avocado, diced – 1 small red onion, finely chopped – 1 lemon juice – 1 tbsp siracha sauce – salt and pepper to taste | |

INSTRUCTIONS
– Prepare your salmon by either grill it or remove them from the canned. To grill salmon, heat up oil on a griller, cook for 2-3 minutes each side until golden brown. Remove from heat and use a fork to flake it into pieces. – In a large mixing bowl, add all the ingredients except milk and oil. Use a wooden spoon to stir to combine. Add milk and mix the batter thoroughly. – Heat up oil in a pan, drop 2 spoonful of batter to make each fritter, cook for 2-3 minutes each side on medium heat until golden brown. ![]() – Transfer to a plate with paper towel and continue with the remaining batter. To make tomato salsa – Combine the ingredients and toss it well. To serve – Place fritter on a serving plate and top with salsa. Enjoy! |
