SPINACH AND SARDINE MACARONI

INGREDIENTS TO MAKE SPINACH AND SARDINE MACARONI
Macaroni pasta
Fresh baby spinach
Canned sardine in tomato sauce
Olive oil
Onion
Garlic
Shredded cheese (I’m using cheddar)
Salt and pepper to taste
HOW TO MAKE SPINACH AND SARDINE MACARONI
Bring a pot of salt water to boil, cook macaroni according to packet instruction, about 8-10 minutes.
Meanwhile, add washed baby spinach with water in the blender and blend until puree and smooth.
Heat up 2 tbsp of olive oil in a pan, sauté and cook chopped onion for 1-2 minutes. Add minced garlic and cook for a further 30 seconds.
Add spinach puree into the pan and on low heat simmer for 2 minutes.
Add cooked macaroni and stir to combine. Add shredded cheese and cook until the cheese is just melt.

Add tomato sardine and do a quick final stir until the sardine is warm enough. Add 1/4 cup of pasta water if desired. Salt and pepper to taste. Serve warm and enjoy!
