Nasi kuning is a popular celebration size dish in Southeast Asia. It often make to celebrate baby’s full moon, birthday or any festive seasons.

This golden turmeric rice is beautiful, fragrant and delightful. The rice is infused in a aromatic and flavour-rich scent from the kaffir lime leaves. It taste wonderful with the combination of herbs and has a mellow coconut taste.

WHAT TO SERVE WITH NASI KUNING

Nasi kuning has since becomes our family favourite rice. It is seriously easy to make and goes pretty well with most of the dishes especially curry. Check out EASY MALAYSIAN LAMB CURRY. You can either cook nasi kuning on the stove top or in a rice cooker. My preferred way of cooking nasi kuning is using a rice cooker. It takes 2 minutes to prepare the ingredients. You then throw everything in the rice cooker and that it. Perfect for a busy after work’s day!

INGREDIENTS TO MAKE NASI KUNING

Basmati rice or any long grain rice

Turmeric powder

Kaffir lime leaves

Coconut milk

Water

Salt

Vegetable oil (optional)

Coriander (optional)

HOW TO COOK NASI KUNING

Wash the rice and rinse well for 2-3 times until water runs clear. Drain off all the water, you can use a sieve in need.

To cook the rice with a rice cooker, place all the ingredients in the rice cooker and stir well. Turn on rice setting and cook accordingly. Once the rice is cooked, let’s sit inside the rice cooker for 10 minutes before open the lid to fluff the rice.

To cook the rice on a stove top, heat up a tbsp of vegetable oil on a pan, once the oil is warm add rice and gently stir until rice is slightly brown for 1-2 minutes.

Add turmeric powder, kaffir lime leaves, salt and stir until the rice is well coated in yellow colour. Slowly add water and coconut milk, bring up the heat to medium until liquid is boiling then reduce to low heat and let’s simmer for 5 minutes with lid on. Check by stirring the rice after 5 minutes and cover the lid again. Let’s cook for another 5-8 minutes until rice is cooked. Turn off the heat and let’s it rest for 10 minutes before opening the lid.

Fluff the rice and transfer to a serving rice bowl. Top with chopped coriander and serve with the dish of your choice. Enjoy!

NASI KUNING -TURMERIC RICE

– 2 cups basmati rice or long grain rice

– 1/2 tsp salt
– 2 cups, 500ml water
– 200ml canned coconut milk
– 1 tbsp vegetable oil (for stovetop cooking)
– 2 tbsp chopped coriander to serve (optional)
